Cacao Almond Fudge Spiced Cookies

Heart nourishing superfood. Guilt free, delicious almond, cacao fudge tasting cookies to enjoy anytime of day. With a hint of fresh ginger these cookies support agni any time of year, but especially the winter season when digestion can be slower.

Equipment

  • 1 large glass mixing bowl
  • wooden spoon
  • Sharp knife
  • pestle & mortar optional but necessary if you are grinding whole spices
  • grater for lemon and ginger
  • 2 Baking sheets
  • Parchment paper

Ingredients
  

  • 8 tbsp flax meal
  • 2 cups tahini
  • 2 cups molasses
  • 1 tbsp vanilla pod/bean or liquid
  • 2 to 4 tsp fresh ginger grated
  • 2 tsp lemon peal grated
  • 1 cup pitted dates or figs chopped
  • 1 1/2 cups organic light sugar or coconut sugar
  • 8 tbsp raw cacao powder
  • 4 tsp cinnamon
  • 1 tsp clove ground
  • 1 tsp cardamon ground
  • 1 tsp black pepper ground
  • 1/2 tsp nutmeg grated or ground
  • 2 tsp Himalayan pink salt
  • 1 cup organic flour
  • 1 cup coconut flour
  • 1 cup almond flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • 1/4 cup crystallized ginger chopped (optional)

Instructions
 

  • preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper and set aside.
    In a large mixing bowl, combine flax meal with 1 & ½ cups warm water. let sit for about 10 minutes to gel. Add molasses and tahini.
  • Add cacao, all spices, ginger, vanilla, lemon peal, dates and or figs and stir to combine
  • Gradually add the flours, baking powder and baking soda, stirring well to mix all ingredients. The dough should be stiff and slightly sticky.
  • Now simply scoop tablespoon sized balls of dough onto parchment paper covered cookie sheets, leaving about an inch of space around the cookies (they will expand in the oven) Top each cookie with chopped ginger if using pressing gently to stick.
  • Bake the cookies for about 20 minutes, rotating the pan halfway through. the cookies when done should be firm to touch, with cracks on the top and a smooth bottom. Do not overbake!!
  • Let cool on the pan for a few minutes, then transfer to wire rack to fully cool. Enjoy with your favourite tea or warm drink.
